Endless Summer - Frozen Fruit Pops

The kids may be back to school but the weather is still hot and steamy here in the south!
Summer is really just a state of mind so keep the feeling going with these easy, delicious and healthy frozen treats.

I use the popsicle molds that have the little "cups" at the end. The cool thing about these is they also have a little straw so you can sip the liquid as it melts.
Cut up any fruits you like but I like to use the most colorful ones. Slice the fruit into pieces that are about 1/2 to 3/4 inch thick for best results. Then just pack the little molds with the fruit. Try and press some of the flat pieces up against the side so they look pretty when you unmold them. I packed mine really full with kiwi, peaches, raspberries and clementines for the ones in the picture. Then just add liquid to fill-line or the top. I like to use an organic pink lemonade but you could use any juice you want such as white grape or apple.
I fill mine really full so I need very little juice in each cup. Now just freeze and you will have a tasty and colorful treat!
